A Chef De partie – Pastry who is ready for his next step as Pastry Chef is needed for the award-winning Nihiwatu Resort in Sumba, NTT

The Pastry Chef is responsible to manage the daily operations by providing professional leadership and direction to all pastry team members allocated by the Head chef for the day. He can train and develop his colleagues and is responsible and accountable to manage and to coordinate pastry team members in preparing bakeries and pastries.

REPORTS TO: Sous Chef & Head Chef

DUTIES AND RESPONSIBILITIES:

Responsibilities and duties for this position shall include, but not be limited to, the following areas and activities. At management discretion, direction may be given for tasks out-side the scope of work described.

• Prepares quality baked goods such as breads and pastries to specifications and amounts listed on order sheet and as indicated by Head Chef

• Continually develops and updates baked items and desserts on menus

• Takes charge & supervises Pastry section in the absence of the Head and Sous Chef

• Consults with the Sous/Head Chef and makes suggestions for new and exciting baked goods as well as pastries and desserts to embellish the menu.

• Ensures the recipe file is maintained in a neat and orderly fashion.

• Trains Commis & CDP team members in methodology, equipment, and technique to create appropriate desserts, pastries and breads.

• Apply and ensure application of procedures and regulations concerning hygiene and safety.

• Frequently communicate the status of all bakery/pastry food production to the Head Chef.

• Supervise, monitor and delegate all & any extra workload to subordinates.

• Make any suggestions to improve the quality of services.

• Establish and maintain effective employee relations.

• Perform any other duties as assigned by Executive/Head/Sous Chef.
